Black Pepper, commonly called the ‘King of Spices’, is the dried, mature but unripe berry (fruit) of Piper nigrum, a branching vine or a climbing perennial shrub. It is native to the Malabar region in India and has been grown here for more than 2000 years. The Black pepper, green pepper and white peppercorns are actually the same fruit and the difference lies in their colour which reflects the varying stages of development and processing methods. Out of all the varieties of the pepper, Black pepper is the most aromatic one.
Black pepper contains essential oil (up to 3.5%) and 5 – 10% pungent acid-amides with piperine as well as piperyline, piperoleines and piperamine, while the oil contains sabinene, pinene, phellandrene, linalool and limonene. These constituents give black pepper the characteristic properties and flavour profile.
The most popular varieties from India are Tellicherry Garbled and Malabar Garbled Black Pepper. These varieties are mainly graded based on the size of the berries and other related physical properties.
Tellicherry peppers are typically large, attractive, dark reddish-brown to black, very aromatic, balanced flavour and are among the best in the world. Their complex aroma ranges from fruity to grassy to citrus and pine—but most of all, a certain bright freshness. They are further classified as “Bold”, “Extra Bold” and “Special Extra Bold”.
Alternatively, Malabar is a good all-purpose pepper. Though it didn't share the Tellicherry's intense sweetness, it has balanced aromas with accents of citrus, resin, and berries.
